Salmon fillet with almond sauce

Potatoes are peeled, quartered and boiled until soft, then mashed into a smooth puree with milk, butter and spices.
While the salmon is marinating and the potatoes are cooking, prepare the almond sauce. The sauce is made by sautéing chopped garlic cloves in butter, followed by the addition of ground almonds, chicken stock and fresh herbs. The sauce is reduced until it reaches a creamy consistency while retaining the distinctive almond flavor.
The salmon is grilled until golden on the outside and pink and juicy on the inside. The almond sauce is further reduced until thickened, then served over the salmon.
